Rustic Rogan Josh
This rustic curry has layers upon layers of flavor from sweet, caramelized onions, tangy tomatoes, ginger, garlic, and mild spices. Delicious with beef, lamb or ground meat, paneer, chicken or meaty vegetables like mushrooms, or eggplant.

3 Simple Steps | Ready in 15 mins
Heat 1 tbsp of oil in a pan at a medium heat, add spices and cook for 20 seconds.
Add the diced meat and cook for 5-6 minutes until browned before adding the base sauce (small pouch), simmer for 1-2 minutes.
Stir in the main sauce (big pouch) and simmer for another 3-6 minutes or until the ingredients are cooked through 3-6 (1-1 1/4 hours for shoulder and leg and 30-35 minutes for mince). Remove whole spices and serve with rice or naan bread.

Cook a vegetable along with the meat – try eggplant, spinach, peas or potatoes (some may need to go in before the lamb).
Fry (pierced) whole green chilies or julienned ginger in the oil before you add the base sauce for extra zing and flavor.
For an elegant meal cook 2 lamb shanks in the sauce and finish with a little cream.
Pour in extra water when slow-cooking meat.
Add fresh chopped cilantro before serving.
